Now we done the sharing, we need the cake!

I made this one specially to celebrate and here is the recipe! I wish I could send you the piece of cake too! If you wondering where are the candles, I decided not to have it as Its my birthday also this month and then I will have 30 candles to blow. ( also I am celebrating 6 years with HRH on the 23rd june).

 June is a wonderful month !

House of Pinheiro Banana & Pears oat cake (cupcake)
210g plain flour
1tsp baking powder
1tsp bicarbonate of soda
Pinch of salt
125g unsalted butter (softened)
250g sugar or brow sugar
2 eggs, beaten
60g rolled oats
3 ripe bananas, mashed
1 teaspoon cinnamon, nutmeg or any other spice you like.
125ml buttermilk or regular milk soured with lemon juice
 A tin of cooked pears chopped (optional) you can cook your own but this little cheat works well.
Method:
Oven 170C – grease loaf tin with greaseproof paper.
Add all ingredients in a food processor ( not the pears) and process/pulse ingredients until smooth. Mix the cooked pears chopped with the cake batter (optional)
Bake from 55 minutes to 1 hour if you put in a tin. For cupcakes, bake for 30 mins or until firm to touch and golden brown. Oven varies so make sure you keep an eye.
Top with caramelized sugar, cinnamon and oats!

Can be stored, sliced and toasted! Perfect for breakfast!


Yummy. ( If you are wondering why I did so small is because I dont need more tentation around.)

Agora vamos ao bolo!  Fiz esse cupcake especialmente para você .Ah ,como eu gostaria de poder mandar um pedacinho!

Anota a receita:

House of Pinheiro Bolo/ Cupcake de Banana & Pera e Aveia

210g farinha de trigo
1 colher de café de fermento e uma de bicarbonato de soda.
Pidata de sal
125g manteiga sem sal ( eu queria eles bem cheios)
250g açúcar refinado ou açúcar mascavo
2 ovos , batidos
60g aveia + para decorar
3 bananas bem madurinhas e amassadas
1 colher de café de canela, ou qualquer outro tempero que você gosta
125ml buttermilk ( leite levemente azedado por suco de limão)
Uma lada de peras em cubos pequenos. Você pode cozinhar sua própria pera, mas eu acho que esse truquezinho não afeita o gosto
Método

Forno pré aquecido a 170C – e a forma untada.
Adicione todos os ingredientes no processador sem a pera, processe bem so depois acrescente a pera  ( e opcional )
Se colocar na forma de bolo, asse por 55 minutos a 1 hora. Se for na forma de muffins asse por 30 mins or ate firme ao toque com um toque dourado. Fornos variam então fique de olho. Para finalizar voce carameliza: açúcar, canela e aveia e coloca em cima do bolo…. ai que delicia. ! Dura ate uma semana se quardado em container fechado e pode ser tostado para o café da manha
