Lemon Bars

  • Base:
    225 g butter, softened {1 cup butter, softened}
    100 g white sugar {1/2 cup white sugar}
    250 g all-purpose flour {2 cups all-purpose flour}

    In a medium bowl, blend together softened butter, flour and sugar. Press into the bottom of a greased tin.
    Bake for 15 to 20 minutes in the preheated oven 175 degrees C {350 degrees F}

    4 eggs
    300 g white sugar {1 1/2 cups white sugar}
    30 g all-purpose flour {1/4 cup all-purpose flour}
    2 lemons, juiced

    In another bowl, whisk together all the filling ingredients. Pour over the baked biscuit base/

    Bake for an additional 20 minutes in the preheated oven. 
    The bars will firm up as they cool.  Enjoy!
