Yesterday was my long term partner birthday. Since school his friends call him HRH (His Royal Highness) due to similarities with prince Williams. Since he is my own prince charming I made his birthday cake into royal theme. He is not a fan of birthday parties, so it was just for us.
He also doesn’t eat icing and home made Chantilly proved a big HIT.
110g (4 1/2 oz) unsalted margarine, soften. If you use butter they will rise uneven.
110g (4 1/2 oz) caster sugar
110g (4 1/2 oz) self raising flour
1/2 vanilla extract ( Never essence )
1 vanilla pod deseeded ( add just the seeds)
50g ( 2oz) of vanilla sugar
180ml (6 1/4 oz) double cream
How to make it:
Pre hear the over 180C ( 350C F/ Gas 4). Line the tin with paper cases or grease with butter
Cream the butter and sugar together until pale. Gradually bat the eggs, one at a time. Add vanilla mixing well. Fold the flour. If mixture stiff, use a dash of milk to create a dropping consistency.
Spoon the mixture in the cases and bake for 15-20 mins.
Leave them to cool in a wire rack.
To make the Chantilly, cream the ingredients until the consistency of whipped cream.
Decorate with summer berries !
