Cookies fit for a queen!


230g all-purpose flour ( 2  cups )

  • 2 tablespoons finely ground Earl Grey tea leaves (Queen’s Favourite) –  I used 2 bags of  “African Autumn” 
  • 230 unsalted butter, softened (1 cup or 2 sticks)
  • 60g icing sugar( 1/2 cup)
  • 1 tablespoon finely grated orange zest- I used a splash of orange juice instead and adjusted the flour by eye.
  • 1 tablespoon vanilla extract


  1. Whisk flour and tea in a small bowl; set aside.
  2. Put butter, sugar, and orange zest in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until pale and fluffy, about 3 minutes. Reduce speed to low; gradually mix in flour mixture until just combined( I added the orange juice now).
  3. Divide dough in half. Transfer each half to a piece of parchment paper; shape into logs. Roll in parchment to 1 1/4 inches in diameter, pressing a ruler along edge of parchment at each turn to narrow the log and force out air. Transfer in parchment to paper towel tubes; chill until firm, 1 hour. I left overnight. 
  4. Preheat oven to 180C (350 degrees F) . Cut int shapes. Space 1 inch apart on baking sheets lined with parchment.
  5. Bake cookies, rotating sheets halfway through, until edges are golden, 13 to 15 minutes. Let cool on sheets on wire racks.

    I so wish I was able to be in London for the festivities. I am quite annoyed with CBC (Canadian version of the BBC) for not broadcasting the flotilla live. I only got to watch an abbreviated version on the news. Thanks for the recipe!

  • Oh.. this sounds so yummy Rachel.. I have never heard of tea cookies.. Wonder , could you use our regular tea[LIPTON] in cookies? Our lipton tea does come in some different flavors..????
    I have some of the festivities on the news..Sounds so fun.. Wonderful..
