Chicken,courgette & aubergine pastry-less quiche.

250 grams of cooked chicken shredded
3 eggs
1 pot of quark * {Delicious stuff. Quark is sort of curd cheese somewhere between cream and cottage cheese. It’s very low in fat, versatile in the kitchen, can be use instead of cream, cream cheese or yogurt}
1 teaspoon mustard
1 courgette and 1 aubergine diced
Season to taste: salt, pepper,parsley,garlic salt.
Cook and dice chicken.
Boil vegetables in sea salt.
In a bowl mix all the ingredients and pour on a non stick flan dish.
Pre heat over 240C.
Bake for 25 mins. Serve with grilled asparagus and fresh salad.
You can season the side vegetables with  hollandaise sauce.

  • I discovered Quark in the past few months and love it and use it instead of sour cream for baked potatoes, it can be used to make nice puddings too. Your quiche looks yummy
